Chitti Kaja Recipe (Small Kaja)

Kajas are the most popular sweets made in Kakinada a city in Andhra Pradesh. Though I am  not much found of eating sweets ,one of the video on internet inspired me of making them.Started of making the original long Kaja's but some how ended up with chitti kajas.The process takes long time, but the final taste is worth making.

INGREDIENTS

All purpose flour /Maida - 2-3 cups
Baking Powder -1/8th tsp
Butter -1/2 cup
Sugar -1 cup
Water- 2 cups
Cardamom powder -1tsp

METHOD

Melt the butter and add it to the flour.

Add water and kneed the dough well for atleast 5 minutes . Cover the dough with wet cloth and let it rest for 1 hour.



Mean while prepare the sugar syrup. Add the sugar into thick bottomed vessel ,add water and bring it to boil. Once the sugar starts boiling reduce to low the flame to let it cook for 15 minutes. String consistency is not required.

After 1 hour , divide the dough into four parts and start rolling on a rolling board as thin as possible
 



As shown in the picture fold the dough.While folding dust with little flour at every folding and at the end seal it with water.
Cut them as shown and press a little with your thumb so that folding are together.
 

 Fry them on a medium flame until they are turned into brown color.When frying stir for some time.

Put them into the sugar syrup.Make sure that the sugar syrup is luke warm  and the kajas are ready .
